Manuel Linares is no ordinary scientist.
A qualified physician, engineer and mathematician, he started cooking classes as a way of combatting stress, he told online Spanish daily El Confidencial.
He took his new passion to a level and completed an MA in ice cream making.
That’s when he came up with his idea for an ice cream that changes colour as you lick it.
“Everyone laughed, but as a physicist I know that there are various possibilities that might work and I was delighted when I managed to crack it and create an ice cream the changes colour,” Linares told the Science Recorder.
Dubbed Xamaleon, the ice cream reacts to the acidic nature of our saliva and the heat of our tongues by changing colour from blue, to purple and pink as it gets licked off.
Although Linares hasn’t completed the patent process yet for his self-proclaimed “elixir of love”, the chameleonic cooler is only available in his newly opened ice cream parlour in the Catalan town of Blanes and in another store in neighbouring Calella de Mar (north-east Spain).
The frozen dessert is a tutti frutti of flavours including strawberries, pistachio almonds, banana, caramel and vanilla; all of which are all-natural ingredients.
"We'd love to set up more ice cream parlours across Europe offering the Xamaleon and many other awesome flavours we're working on," Linares told The Local.
"I've had to put together a list for my mum of all the articles that have been written about my ice cream, she says she's so proud of me and needs to show them all off to her friends."
